With over 15 years of culinary experience, I’m Chef Mark Grigsby, host of The IncrEDIBLE Discourse. From bustling kitchens to owning my own restaurants in Miami, my journey in the culinary world has been nothing short of extraordinary.I grew up surrounded by good food, but becoming a chef wasn’t always part of the plan. My culinary career began out of necessity, not passion—I started in a chain restaurant simply because I needed a job. But to my surprise, the work came naturally to me. Cooking felt right, easier than balancing school, work, and raising kids. What started as a job to make ends meet soon evolved into something more meaningful. After years of refining my craft through culinary school and hands-on experience in diverse kitchens, I embraced my passion for cooking. This passion led to opening my own food truck in South Florida, serving scratch-made dishes that caught the attention of the community. Eventually, that food truck became the foundation for my restaurants in Miami, where I built a reputation for exceptional, from-scratch cuisine. Food has been a constant in my life, shaping who I am as a chef and as a person. My culinary journey isn’t just about preparing meals—it's about immersing myself in the culture of food, continually learning, and sharing that knowledge with others. Today, I channel my passion through The IncrEDIBLE Discourse, a podcast where I share recipes, tips, and lessons for young chefs, home cooks, and anyone curious about the culinary world. My goal is to provide an experienced chef's perspective on what it takes to succeed in the kitchen—both in the restaurant industry and at home. I offer an unfiltered look into the reality of running a professional kitchen and the mental and physical demands that come with it—things that culinary school might not prepare you for.
